Fresh Fruit & Peppermint Tea Slushie

This amazing slushie recipe has been kindly supplied by one of our lovely customers 'Cenzo Cafe' of Murwillumbah.  It's a favourite amongst their patrons and they were happy to share it with you all, so a big thank you to them and we hope you enjoy making your own amazing slushie at home!

Makes 2 cups

 

Ingredients:

1/2 an apple

2 large chunks of pineapple

1/4 cup of raspberries

1/4 cup of cold peppermint tea (can be made a day ahead)

3 big chunks of watermelon

1 scoop of ice or about 3/4 of a cup

1 teaspoon of brown sugar (optional)

Garnish with a slice of pineapple or watermelon and some fresh mint (if you have any)

 

Instructions:

  • If you haven't had the chance to brew some peppermint tea the day before and allowed it to cool in the fridge then simply steep your peppermint tea for 3-4 minutes in a combination of half boiled water and half cold water. Once it's finished steeping pour it into a small bowl or container and allow to cool for a few minutes.  
  • Juice the apple and pineapple chunks
  •  Add juice from the apple and pineapple to a blender
  • Add the rest of the ingredients, including the cooled peppermint tea, to the blender and blend briefly to create an amazing slushie.
