Matcha powder is produced in nearly the same way as the finest grade premium Japanese green tea gyokuro as both are derived from specialised cultivation of camellia sinensis—à la the tea plant! Just before harvest, the tea leaves are shaded for three weeks. This method encourages an increase in chlorophyll content, which gives the matcha powder its signature vibrant green colour.
Unlike regular green teas, the grounded leaves that make up matcha powder are consumed in their entirety rather than infused. This means that the chlorophyll, l-theanine, catechins, and caffeine levels in the powdered tea are plentiful and beneficial.
